Peanut sauce so good you will want to drink it. The chicken is almost secondary. Almost.

What you need 🛒

Marinating the chicken overnight makes a significant difference — the coconut milk tenderises the meat and the spices penetrate much deeper. Even 4 hours is better than 30 minutes if you have the time.

Chicken thighs boneless600 g
Soy sauce3 tbsp
Coconut milk4 tbsp
Turmeric1 tsp
Smooth peanut butter4 tbsp
Sweet chilli sauce2 tbsp
Limejuice only1
Garlic cloves1
Wooden skewers8
Red curry pastefor the peanut sauce1 tbsp

How to make it 👨‍🍳

Soak the Wooden skewers in cold water for 30 minutes to stop them scorching under the grill.

Cut the Chicken thighs boneless into long strips about 2–3 cm wide and put them in a bowl.

Mix the Soy sauce, Coconut milk, Turmeric, and half the minced Garlic clove together and pour over the chicken. Marinate for at least 30 minutes.

Thread the strips onto the soaked skewers, weaving the meat back and forth along each one.

Grill under a very hot grill or on a griddle pan (a ridged cast-iron pan) for 4–5 minutes per side until the chicken is cooked through and has deep brown char marks.

Stir together the Smooth peanut butter, Red curry paste, Sweet chilli sauce, Lime juice, and remaining Garlic clove in a small bowl to make the satay sauce. Loosen with a splash of hot water if needed. The red curry paste adds depth and a gentle heat.

Serve the skewers with the satay sauce for dipping.
