What you need 🛒

Ground beef20% fat500 g
Salt1 tsp
Black pepper½ tsp
Brioche or sesame buns4
Cheddar or American cheese slices4 slices
Butter lettuce leaves4
Ripe tomatoessliced2
Red onionthinly sliced1
Picklesto taste

How to make it 👨‍🍳

Divide the beef mince into equal portions — handle the meat as little as possible.

Shape each portion into a patty slightly wider than your bun, as they shrink during cooking. Press a shallow indent into the centre with your thumb to stop them doming up.

Season both sides generously with salt and black pepper immediately before cooking — not in advance.

Heat a cast iron pan or griddle to very high. Cook the patties for 3–4 minutes per side for medium, pressing down firmly for the first 30 seconds to get good contact with the surface.

Lay a slice of cheese on top in the last minute of cooking. Cover the pan briefly to help it melt.

Toast the buns cut-side down in the pan for 1 minute until golden.

Build your burger — bun base, lettuce, tomato, burger patty, cheese if using, pickles and onion. Add your choice of sauce and enjoy. Our Burger Sauce recipe is worth making if you have not tried it yet.
