Eggs poached in a smoky, spiced tomato sauce straight from the pan. Middle Eastern comfort food that works for breakfast, lunch or dinner. One pan, zero fuss, completely delicious.

A note from us

Crumble feta cheese over the top just before serving for an extra layer of creaminess and salt — it is not traditional everywhere but it is delicious.

What you need 🛒

Eggs4
Tinned chopped tomatoes400 g
Red peppers2
Brown onion1
Garlic cloves3
Cumin1 tsp
Smoked paprika1 tsp
Chilli flakes1 pinch
Cayenne pepperoptional for extra heat¼ tsp
Olive oil2 tbsp
Fresh coriander or parsley1 handful
Feta cheese50 g
Crusty breadto serve

How to make it 👨‍🍳

Heat olive oil in a large deep frying pan over medium heat

Fry the diced onion for 5 minutes until soft, then add the sliced red peppers and cook for another 5 minutes

Add the crushed garlic, cumin, smoked paprika and chilli flakes. Stir and cook for 1 minute until fragrant

Pour in the tinned tomatoes and season well with salt and pepper. Simmer for 10 minutes until the sauce thickens

Make 4 wells in the sauce with a spoon and crack an egg into each one

Cover the pan and cook for 5-7 minutes until the whites are set but the yolks are still runny

Scatter over crumbled feta and fresh coriander or parsley

Serve straight from the pan with plenty of crusty bread for dipping
