The gherkin brine is the secret. It sounds odd but it is what every good burger joint uses — it adds sharpness and depth that you cannot get any other way. Do not skip it. Burger sauce actually improves overnight as the flavours develop and the gherkin brine mellows into the mayo. Make it the day before if you can. Keeps in the fridge for up to 1 week in a sealed jar.
Add the mayonnaise, ketchup and American mustard to a bowl and mix until combined.
Add the gherkin brine — this is the ingredient most people skip and it is the one that makes the biggest difference. It adds a sharpness that cuts through the richness of the mayo and ties everything together.
Add the finely chopped gherkins, garlic powder, smoked paprika, onion powder and cayenne. Mix well.
Taste and adjust — more ketchup for sweetness, more brine for sharpness, more cayenne for heat.
Season with salt and a crack of black pepper. Refrigerate for at least 15 minutes before using — the flavours develop as it sits.
Keeps in the fridge in a sealed jar for up to 1 week.
